After a great summer of Tahoe, Twain Harte, Santa Cruz, and Yosemite, it finally came to an end for us. Here are some great pictures we took at Yosemite. We went with some friends and got to see a lot of beautiful sights. We look forward to going again:)

Santa Cruz
We just got back from a great trip to New Brighton Beach, Santa Cruz. We did a day at the Monterey Bay Aquarium and Cannery Row. Then we did a day at the beach and we concluded with a day at the Santa Cruz Beach Boardwalk. We had so much fun! The kids cannot wait to go back.

Lighter Chicken Saltimbocca

Next time I would not put the sage leaves in. I am not a fan of sage so I ended up just taking them out. This is very healthy and so yummy.
Lighter Chicken Saltimbocca
Gina's Weight Watcher Recipes
Servings: 6 • Serving Size: 1 piece • Points: 3 ww pts
Calories: 155.2 • Fat: 4.3 g • Protein: 21.7 g • Carb: 4.5 g • Fiber: 0.2 g
3 (8 oz) chicken cutlet halves (24 oz total) , fat removed
3 (1.5 oz) slices paper thin prosciutto, cut in half
6 sage leaves
1/4 cup flour
olive oil spray
1 tbsp butter
salt and fresh pepper
3/4 cup fat free chicken broth
1/4 cup white wine
Cut each breast into two cutlets to make a total of 6. Pound each one to about 1/4".
Season chicken with pepper. Lay a sage leaf on top, then a 1/2 slice of prosciutto, fold over and lightly pound ends of chicken to seal.
Place flour in a shallow bowl and lightly dredge chicken in flour, shaking off excess.
Heat a nonstick frying pan. When hot, spray olive oil. Sauté chicken 1 minute on each side. You may have to do this in a few batches.
Remove chicken from pan and deglaze the pan with wine, scraping up any brown bits. Add chicken broth, butter and return chicken to the sauce. Finish cooking on low, 5 minutes. Serve this over a bed of wilted greens and top with sauce.

My Ainsley
Madison and I have been talking a lot about history. She has studied a lot about women in history and recently was talking to me about Harriet Tubman. She did not understand why there were slaves. I had to take her back to the beginning and try to explain the bizarre concept. I am glad she does not understand it. I think that means the human race has made some progress right?
Anyway, Ainsley was listening a lot to our conversations. On Sunday, I made the girls go through their toy room with me piece by piece to get rid of stuff and organize it. After an hour, Ainsley says, "Why can't we just get some slaves to do this for us!" So much for the progress:)

Lake Tahoe 2010
We had an amazing trip to Lake Tahoe this year. I can honestly say, it was the best trip we have ever had up there. The kids are at great ages! They were a lot of fun and we got to do things we have not before.
On Wednesday, we did our annual trip to Truckee where we have breakfast at Squeeze Inn and then go to the best Toy Store and the kids get to pick a toy. They are in heaven!!!
On Thursday, we did miniature golf and then went to Emerald Bay where we hiked up to see Eagle Falls. The kids LOVED hiking. They take after their father. We then went to Fanny bridge to feed the largest fish I have ever seen. We then did our annual dinner at Jason's and home for Smores.
Today we saw "How to Train Your Dragon" and we all LOVED it. Logan sat and watched the entire movie. He has never done that before! Ainsley was crying after the movie because she realized we had to come back home. That is always a good sign. Let's hope the rest of the summer is as good as this trip! Here are some fun pictures.
