My sister-in-law, Chrissie, gave me the Pioneer Woman Cooks Cookbook. I have loved what I have tried so far. These muffins were very yummy! I think I would also like them without the glaze and with cranberries in them. The kids loved them and the batter tasted like cake batter! Yum.
Ingredients
■2 sticks Salted Butter, Softened
■1 cup White Sugar
■2 cups Flour
■2 whole Eggs
■1 cup Buttermilk
■1 teaspoon Baking Soda
■2 whole Oranges, Juiced And Zested
■1 cup Brown Sugar (lightly Packed)
Preparation Instructions
Cream together butter and white sugar in a mixing bowl. Add eggs, beat well, and mix in flour. Dissolve baking soda into buttermilk, then add to the rest of the batter along with the zest from both oranges. Mix well.
Grease and flour mini muffin pans (or spray with nonstick spray with flour). Fill cups 2/3 full. (This recipe yields 36 mini-muffins, or 3 tins.)
Bake at 375ºF for 12 to 17 minutes (or 20 to 25 minutes for regular-sized muffins), or until lightly browned.
In a separate bowl, combine brown sugar and juice from the freshly zested oranges. You should have about ½ cup. Mix well. Drizzle this glaze over the warm muffins. Remove muffins from the pan while still warm.
Note: If you don’t have buttermilk, add 1 tablespoon white vinegar to just under 1 cup of milk.

Yummiest Rolls
I got this recipe from our recipe exchange that I do each December. Thank you Emily for these. They were soooooo good and the ingredients are ones that I actually have all the time. That is always nice for homemade rolls! I had this with homemade strawberry freezer jam and they were so good. I lost count of how many I ate! Madison said they were the best rolls she had ever tasted. (In all her 6 years of life)
1 cup boiling water
3/4 cup shortening
2 tsp. salt
1 cup warm water
1/2 cup sugar
1 TBSP yeast
2 eggs
6 cups flour (this was the perfect amount for mine, but you might need more)
Put shortening in a cup of boiling water that has salt added to it and allow it to melt and stand until luke warm. In a separate bowl, dissolve sugar in warm water and sprinkle yeast on it. Allow it to stand at least 5 minutes. When shortening mixture is lukewarm, add eggs and put together with yeast mixture. Add flour (or more if too sticky). Cover and let rise until double.
To speed this up, I put the dough in a oven safe bowl (sprayed with cooking spray) I then put suran wrap on top. I heat the oven to 200 degrees and once it is there, I turn it off. I put the bowl with the dough in the oven and it rises quicker. (usually about half the time)
Once it has doubled, roll out the dough. I took half and did a circle and then did small triangles and made crescent roll shapes. You can do whatever you like to do. I then put them in a 9x13 pan. Usually about 15 will fit in each pan. The recipe makes about 36 rolls. Cover those and let them rise again. I did the 200 degree trick with these as well.
Bake at 375 for 12 minutes. (I needed a couple of extra minutes)

Banana Crumb Muffins
I stole this recipe from a friend's blog and made them today. They are so good and addicting! The crumb top makes me think of Mimi's Cafe and their amazing muffins. This is definitely not a Weight Watchers recipe! I doubled the recipe since I had a lot of bananas I could use. I was able to make 24. I will share with some friends today!
1 1/2 c flour
1 t baking soda
1 t baking powder
1/2 t salt
3 bananas, mashed
3/4 c sugar
1 t cinnamon
1 egg, lightly beaten
1/3 c melted butter
Topping:
1/3 c brown sugar
2 T flour
1/8 t cinnamon
1 T butter (cold is fine)
-Mix dry ingredients together; mix wet ingredients together; then mix dry into wet just until combined. Spoon into paper liners or greased muffin tin about 3/4 full.
-Mix topping ingredients until resembles cornmeal. Sprinkle generously on top of muffins. This makes plenty of topping for 12. You may even be able to get a few more muffins.
-Bake 375 for 18-20 minutes (I did 18) or until toothpick comes out clean.
-These get more moist the longer they sit. Recipe makes 12 but you may be able to get more than that.

Easiest Breadsticks Ever
Top with Garlic and Parmesan Cheese for more taste!
1 TBS yeast
1 ½ cups warm water
Mix and let stand 5 minutes
1 TBS sugar
1 tsp salt
3 cups of flout
Knead mixture, let sit 5-10 minutes.
Melt ½ cube of butter.
Put half in bottom of pan.
Roll dough, cut into strips
Twist and put them into the pan.
Cover with butter and Parmesan cheese.Cook at 400 for 5-10 minutes until edges are brown
